The Atrium Chinese Restaurant Steps into Summer with Seasonal Mushroom and Fungus Menu and Winter Melon Set Menu


(5 July 2023) The Atrium Chinese Restaurant at the Hong Kong Convention and Exhibition Centre celebrates summer solstice with two limited-time scrumptious menus. Created by Executive Sous Chef Kon Chu-kwong, a feast of nine mushrooms and fungi dishes using 11 kinds of mushrooms; and a refreshing winter melon soup set menu, paired with a bottle of complimentary yuzu genmaicha sparkling tea is available from today onwards, showcasing the best that the summer season has to offer. 

Seasonal Mushroom Specialties 
Available from July until September, the Seasonal Mushroom Specialties a-la-carte menu showcases nine tasty dishes that feature in-season mushrooms and fungi like the prized matsutake mushroom, morel mushroom, scarcodon aspratus. 

Some highlights include the Double-boiled Fish Maw Soup with Black Goji Berry and Matsutake (HK$398). Matsutake mushroom is full of vitamin B, protein, copper and potassium, considered a natural medicine from the woods. Thanks to these nurturing properties as well as the collagen-packed fish maw and black goji berries, the soup will replenish your yin and yang.

Wok-fried Shrimp Paste Stuffed Morel Mushrooms with Salted Egg Yolk (HK$240) is another masterpiece of Chef Kon. Morel mushrooms are skillfully stuffed with shrimp paste, then coated with a creamy, bright salted egg yolk sauce, that leaves you wanting more.

Translates as “black tiger’s paw” in Cantonese, the scarcodon aspratus is known for its cholesterol-lowering properties, the robust flavours of the mushroom are then sautéed with Ostrich Fillet (HK$300) and cordyceps flowers. 

The traditional Osso Bucco (HK$320) is elevated with wild russula, a mushroom native to the Fujian province with a mild taste that nicely compliments the rich and flavourful veal shanks, braised alongside with carrots, celtuce and tomato. Termite mushroom gives a sweet and meaty taste that resembles to chicken, it is tied together with the earthy amber wood ear and stir-fried with Garoupa Fillet (HK$360). 

Eight Treasures Winter Melon Seafood Soup Feast
Contrary to its name, it is widely known that winter melon possesses cooling and hydrating properties, which made it a great vegetable to consume during hot summer months. Priced HK$488 per person, a set menu tailored for two persons is available from today onwards until 30 September 2023.

The six-course set menu commences with an auspicious Double Boiled Eight Treasures Winter Melon Seafood Soup. In this recipe, Chef Kon uses a mini winter melon. He has doubled boiled for two hours with a medley of ingredients such as crab meat, prawn, scallop, garoupa fillet, roast duck, lotus seed, bamboo fungus and mushroom; and complemented with tonkin jasmine buds.

A juicy Crispy Fried Pigeon then follows it. Next up, guests can choose between Crispy Beef Brisket or Baked Spare Ribs with Plum Lime Sauce. The former uses quality beef brisket marinated for 24 hours then fried to golden brown to impart a crispy yet tender mouthfeel; the latter is lightly fried spare ribs then baked in a homemade sauce of flower nectar and sour plum, striking an ideal balance between sweetness and tanginess.

Guests can enjoy a healthy stir-fried of Assorted Mushrooms and Celtuce and hearty Crab Meat and Shrimp Fried Rice Wrapped with Lotus Leaf. The aromatic lotus leaf is packed with umami-laden ingredients like crab meat, shrimp, chicken and shiitake mushroom and premium fried rice, that leaves a delightful fragrance with every bite. 

A Baked Custard Pastry with Blaze Mushrooms concludes the meal, paired with a bottle of Sparkling Yuzu Genmaicha from homegrown local brand Mindful Sparks that invigorates and refreshes the palate.

The winter melon soup is also available in larger portions for 12# and 6# persons, each priced at HK$1,488 and HK$828 respectively (#Please reserve at least 2 days in advance).
