Responsibilities:

  • Assists Chef de Cuisine or Sous Chef in supervising performance of subordinates, executes and supports the overall food, showpieces and related non-food production premises, ensures high standard of food quality and satisfaction of customers as well as keeping the cleanliness and work safety of the kitchens
  • Receives work orders from Chef de Cuisine or Sous Chef and allocates work to subordinates accordingly
  • Supervises subordinates to ensure a productive and efficient work performance
  • Analyses recipes to decide and justifies the ingredients needed for the production of dishes
  • Checks with the finished order taking requisition forms prepared by Demi Chef and orders food ingredients and kitchen inventory directly from Purchasing & Supply Department
  • Monitors the daily food consumption based on event orders, function forecasts and reservations in a systematic and efficient way
  • Arranges rosters for subordinates to ensure enough daily manpower for different kitchen functions
  • Ensures adherence to the legal hygiene regulations, including both the public and personal area
  • Assists in developing standard menus and ensures the preparation and formation of all kinds of standard recipes, sampling and testing of all confirmed menus

Requirements:

  • Holder of certificate in food hygiene and safety
  • Holder of certificate of level 2 (Trainers Chef) of Trade Test
  • Minimum 10 years’ experience in hotel and catering management or other related industry, with minimum 5 years in Chef de Partie level or above
  • Good command of both written and spoken English and Chinese;
  • Good communication, co-operation, supervisory and management skills
  • Mature and responsible
  • Able to work under pressure
  • Shift duty is required
