Chef de Cuisine

Responsibilities:

  • Assists Executive Sous Chef – Western Kitchen in overseeing Western Kitchen, supervises performance of subordinates, executes and supports the overall food, showpieces and related non-food production premises, ensures high standard of food quality and satisfaction of customers
  • Co-ordinates with Restaurant Managers, Assistant Event Managers and Event Managers to understand customers’ needs stated in event order and on-site production
  • Explains to customers on potential food safety hazard and provides professional advices during pre-event meetings
  • Develops customized or modifies existing menus for customers after the evaluation of their needs and consideration of potential food risks
  • Formulates recipe from the designed menu and allocates to the responsible kitchen unit accordingly
  • Monitors food costs to attain profitable and efficient food production in the Centre
  • Forecasts and controls food wastage through obtaining information and insights from reports of daily food consumption and purchasing orders
  • Provides trainings and technical guidance to subordinates through advice and live demonstration
  • Ensures adherence to the legal hygiene regulations, including both the public and private area

Requirements:

  • Diploma or above in hotel and catering management or other related fields
  • Holder of certificate in food hygiene and safety
  • Holder of certificate in level 2 (Trainers Chef) or above of Trade Test
  • Minimum 15 years’ experience in hotel and catering management or other related industry, with minimum 6 years in Chef de Cuisine level or above
  • Good command of both written and spoken English and Chinese
  • Capable of developing new ideas and willing to try and accept new things
  • Good computer skills
  • Good supervisory, co-operation and people management skills
  • Good communication, planning and organising skills
  • Mature, responsible and quick decision
  • Able to work under pressure
  • Shift duty is required
