(29 June 2020) The Atrium Chinese Restaurant, specialising in fine Chinese cuisine, will be unveiled at the Hong Kong Convention and Exhibition Centre (HKCEC) on 2 July 2020. The restaurant is ready to entice your taste buds and create the new tradition with the finest modern and classic Chinese cuisine.

The Atrium Chinese Restaurant is headed by Chef So Chi-fai who has over 30 years of extensive culinary experience. Chef So is passionate about crafting delicacies by blending various food ingredients and specialties. He focuses on the subtlety of dishes and is dedicated to present the fresh taste of food ingredients. Under the leadership of Chef So, the restaurant offers a selection of traditional Chinese delicacies and newly crafted modern dishes.

Expertly Curated Dim Sum Dishes
The restaurant serves an extensive range of classic dim sum dishes including Shrimp and Bamboo Shoot Dumplings and Minced Pork Dumplings with Crab Roe and Mushroom. Our dim sum chefs have also given an exquisite twist to the presentation of traditional dim sum. Shrimp and Pork Dumplings in Supreme Soup is definitely one of the highlights. Filled with shrimp and pork, the dumpling is presented in the shape of a goldfish with carrot juice moulded as eyes and a mouth. The dumplings are served in supreme soup, just like goldfish swimming in a pond. Steamed Pan-fried Scallop and Porcini Buns are crafted in fan-shaped shells filled with a piece of meaty and tender scallop. Two other modern delights available in the dim sum platter at lunch time are pear-shaped Deep-fried Chicken Dumpling and Deep-fried Squid Spring Roll with Crab Roe which is handcrafted into the shape of a flourishing Chrysanthemum.

Chef’s Recommendation
Steamed Glutinous Rice with Mud Crab
is one of the signature items served at The Atrium Chinese Restaurant. Inside the bamboo basket is a whole steamed fatty crab with fresh and juicy flesh. Glutinous rice is placed underneath to absorb the essence from the crab. Wok-fried Prawns with Salted Egg Yolk and Pomelo Sauce offers you tender prawns with two different flavours. With the use of fish maw, which has a high nutritional value, Stir-fried Fish Maw with Mushroom and Egg White is a healthy pick. Tapping into the avocado trend, Chef So has created Sautéed Avocado and Pumpkin with Lily Blubs. Inventing a new way of cooking by deep-frying the avocados instead of serving it raw and fresh, the avocados are crunchy on the outside and creamy on the inside. Fried with pumpkins and assorted mushrooms, it makes a perfect vegetarian dish. Other highlights include Marinated Chicken with Soya Sauce, Baked U.S. Oysters with Spring Onion and Ginger, Sweet and Sour Beef Fillet and Steamed Tomato Stuffed with Water Chestnuts, Celery and Assorted Mushrooms.

East-meets-West Desserts
To give diners a surprise and pleasant finish, Chef Ken Lee, HML’s Executive Pastry Chef, revamps traditional Chinese desserts with a western spin to create the new tradition. Vanilla Ice-cream Bar, Fried Chinese Churros with Honey Glaze is one of the distinctive examples. The traditional Chinese churros are served in a western style with creamy vanilla ice cream and crunchy honeycomb. Almond Pudding with Sichuan Spiked Pineapple and Goji Gel features pudding made with both Chinese and western ingredients - apricot seeds and almond. Our pastry chefs put a spin with Sichuan spices on the compressed Pineapple to sharpen your taste buds. The pin-and-needle sensation that bites your tongue when you first taste the Sichuan peppercorn is truly unique. This numbing effect actually sharpens your taste buds, so that everything you taste becomes more appetizing. These new sweet treats boast more intriguing flavours and textures, coupled with refined presentations.
